Chocolate Smore Cookies - Supper for a Steal

About a month ago we had a short weekend in Mount Dora, Fl. I was in town for a college friend’s bridal shower and Hagin tagged along to keep me company. After the bridal shower we walked through downtown Mount Dora, which by the way is a very cute place full of fun shops. We had stumbled upon an ice cream shop the night before, but were too full from dinner to even think about dessert. The next afternoon we headed back, but it wasn’t the ice cream that caught my eye. They had ginormous cookies. We both decided on a different one to split and I picked what I thought was a Rocky Road Cookie, until the girl told me it was S’more. Um, yes please. Hagin got a chocolate chip or M&M. I don’t remember. It didn’t have anything on the S’more cookie.

I knew I had to recreate some s’more cookies at home and after scouring the internet I found the closest recipe I could. These cookies were so easy to make. Made even easier with my shiny new Christmas present.

I’ve never been a huge baker, something about all that precise measuring just makes me nervous. But if I can make these cookies, so can you.

Cake mixes are my new secret weapon. They make the perfect cookie. Call it cheating if you want, but I have never seen someone turn down one of my cake box cookies.

Chocolate Smore Cookies

I brought these along to a dessert party and I can assure you they were a big hit among the crowd.

Chocolate S'more Cookies

Serves: 3 dozen
Ingredients
  • 1 box devil's food cake mix
  • 2 eggs
  • ¼ cup brown sugar
  • ½ cup melted butter
  • 1 large Hershey's milk chocolate bar (about 10oz), chopped
  • 5 honey graham crackers, crumbled
  • 1½ cup mini marshmallows
Instructions
  1. Preheat oven to 350 degrees. In a large bowl mix together cake mix, eggs, brown sugar, and melted butter. Mix in Hershey's bar, 4 of the crumbled graham crackers, and 1 cup of mini marshmallows.
  2. Using a cookie scoop (I use 1½ tablespoon), scoop cookies on to parchment lined baking sheets press additional marshmallows and graham crackers into top to flatten some.
  3. Bake 11-13 minutes. Let cool 3-5 minutes on cookie sheet and transfer to cooling rack.
